Corn Jalapeño Salsa

Corn Jalapeno Salsa is a fresh blend of sweet white corn and spicy jalapeno combined to make a quick and well-balanced salsa.

Where Corn Jalapeno Salsa was born.

If a salsa could legitimately make you happier, this would be it! My inspiration for this showstopper comes from a place that you’ve probably been a million times – Chipotle!  My usual salad always came with two salsas: corn and tomato.  And I’ve made a gazillion salsas to replicate the mixture of salsa, guac, sour cream and fajitas. Three layers dips and multi-ingredient salsas ensued, however my all-time crowd pleaser is this Corn & Jalapeno Salsa.


Other than the unbeatable light and fresh taste, why do I love this Corn Jalapeno Salsa?!

  1. Only 5 steps.
  2. Only 10 minutes to make.
  3. Simple ingredients that stand out on their own and proves that less is more (delish).

The Jolly Hostess twist this week is my take on Chipotle’s corn salsa with five simple ingredients (and some spices!), using sweet white corn and spicy jalapeno.  These lead ingredients shine with refreshing cilantro and lime juice.

*Prepared over 4th of July weekend.  Five guys absolutely demolished this salsa immediately after it was set out. Shout out to my bros!

Corn Jalapeño Salsa Yum

Instructions
  1. Place thawed corn in a medium-sized bowl. Dice red onion and jalapeno and add to same bowl.
  2. Wash and mince cilantro and add to bowl.
  3. Juice limes and add to bowl.
  4. Mix together. Add spices and mix again. 
  5. Serve in a bowl with tortilla chips (or eat it immediately for yourself!)
Recipe Notes

A veggie chopper (like OXO Good Grips Chopper) is my favorite tool for mincing into tiny pieces for this app.
