Hi, loves! I hope that you are taking some vitamin D to get through these dreary days. If not, you have the queen of appetizer menus to look forward to on Super Bowl Sunday. I plan on putting a spin on my Spinach & Artichoke Petite Skins, and using pimento cheese and a touch of cilantro. The Super Bowl combines my love of three things: party apps for days!!, commercials (I’ve got to analyze every one) and football.

Did you know that the top searched appetizer for the Super Bowl in Illinois is Buffalo Chicken Dip (thank you, google)? You can’t go wrong with the classic Frank’s Buffalo Chicken Dip (I put it in the slow cooker instead of the oven), but it’s refreshing to have a healthy option that includes love for buffalo chicken. It’s real, I understand! My goal was to create an option for Super Bowl Sunday that is easy for busy hostesses to put together and shows some love to the men – or women! – in your life that can’t do football without buffalo chicken. And that it looks gorgeous & full of color (got to stand out at the Super Bowl spread). I present, my Buffalo Chicken Salad.
The Jolly Hostess twist this week takes the base of Buffalo Chicken Dip and adds a plethora of yum veggies: avocado (a must have), cherry tomatoes, green & red pepper, red onion, corn and green onions. All these veggies need sharp cheddar cheese and cilantro for flavor, of course. This recipe serves 4, but if you have a ton of people coming over, make it for the # of people coming, but keep it deconstructed, in case your loves want to DIY (like this recipe and this recipe).
For busy hostesses, I like to make the chicken the night before to cut down time and let it sit and marinate.
