I could eat Butternut Squash everyday. Who’s with me? The comforting, earthy nut and sweet flavor makes this ingredient a must order when on the menu. However, it’s a SOB to peel or cut for dishes like butternut squash fries, soup or simply roasted. The easy solution is to purchase pre-cut butternut squash, but I promise, the flavor is not the same (but I understand needing to head to Trader Joe’s in a crunch!). Luckily, I came across a time and stress savor from my hostess mom – and, surprise! – it uses the microwave.
1 butternut squash
Prep Time: 30 seconds, Cook Time: 2 mins and 50 seconds
- Poke holes with a fork every two inches around the entire butternut squash.
- Place the butternut squash on a plate and microwave for 2 mins and 50 secs (can put in longer if needed).
- Let butternut sit for a minute.
- You’re ready to peel! From there, cut in half, scoop seeds out and cut as desired. You’ll see that the skin peels right off with ease.
