Minted Cucumber Martini


There is so much to say about cucumber and its relaxing characteristics. Take a sip of this Minted Cucumber Martini and you will be transported to a spa, wearing a luxurious robe and slippers (men, this is for you too!). The Jolly Hostess twist this week takes the classic cucumber martini and adds a refreshing, soothing herb, which has a fascinating history, (See here!)  for the complete relaxation machine.


1 cucumber

5 springs of mint, with leaves stripped and torn in half

6 cups of sparkling water

1 lime

1.5 ounces of vodka per glass

*Serves 6. Before heading to the grocery store, please note that sparkling water, mint and cucumbers need to sit for a few hours.

Peel cucumber (recently found out that a peeler is the best tool ever for this task! MIC DROP), and use fork to draw lines from top to bottom, making indents. This will help release flavor. Slice half the cucumber 1/8″thick and half thinly.

Add the thicker cucumber slices to pitcher along with sparking water and mint. Let sit in the fridge for 2-3 hours.

When cocktail hour arrives, muddle the thinly sliced cucmber in a mortar and pestle.  If you don’t have one, a muddler or spoon will work just as good.  Add to 1-2 pieces and some of the muddled cucumber juice into glasses.

Fill glasses with vodka and 2 splashes of sparking water infused with cucumber & mint. Add 1 mint leaf and lime wedge per glass.
