I. Love. Corn dogs. Especially little pigs in a blanket dipped in mustard or, more recently, marinara sauce. I’ve had them for dinner many times in my single-&-new-to-Chicago days. However, corn dogs are not exactly the most healthy snack. The Jolly Hostess twist this week takes real corn – with summer seasoning – and bell pepper to substitue the corn bread and topped with a sizzling mini hot dog. If you are a veggie lover, this adaptation is for you – the sweetness of the corn is even better than corn bread – you’ll be so over corn dogs as soon as you try!
1/2 can sweet corn
14 oz mini hot dogs (or 9 pieces)
18 sweet mini peppers
1/2 tsp cayenne pepper
1/2 tsp pepper
1/2 tsp garlic powder
1 tsp bread crumbs
*If you want to stay away from hot dogs for a healthier option, purchase standard sized chicken or turkey hot dogs and cut in half & little pieces. My fave are Applegate and Trader Joe’s brands, usually found where the hot dogs are.
Makes 18 pieces; Prep Time: 10 mins; Cook Time: 35 mins
Place mini hot dogs on skillet w/ cooking spray for 5-10 mins, until browned. Move dogs around occasionally. Note that they will cook again in the oven later on.
Set aside. Preheat oven to 350 degrees.
For your corn, put in food processor and grind until creamy. Add cayenne pepper, black pepper, garlic powder and bread crumbs. Pulse until fully combined. Set aside.
*If you’re making this for your kids’ snack, leave out the cayenne if needed.
This step is the colorful part of my recipe and, I’m geeking out here, but it’s amazing how pretty red and yellow peppers are! See for yourself below.
Cut the top off each mini pepper and using either a sharp knife or Pure Komachi 2 Series Tomato/Cheese knife (a godsend from my bro-in-law: See here!), scrape the white parts and seeds out of the peppers. Twisting the knife is the best method for this.
Cut mini-peppers in half. Do any clean-ups needed with knife.
Using a teaspoon, fill corn mixture into the little boats created by your superior knife skills. You’ve got this.
Place mini hot dogs on top of corn mixture. Spray baking pan and place pieces 1/2″ apart.
Bake for 25 mins.
Serve immediatly. I am the queen of condiments and they are not needed for this app!
