2 pieces of whole wheat flat bread, cut in fourths
1 small summer squash
16 slices of asiago cheese
1/4 cup roasted almonds, chopped in food processor
Makes 8 servings for dinner or an app; Prep Time: 10 mins; Cook Time: 35 mins
Slice summer squash and saute on skillet at medium heat with a dash of salt, pepper and garlic powder. 5 mins on each side until tender. Melt 1 teaspoon butter on skillet, panini-maker or George Foreman Grill and place one pice of pita down. Lay two slices of asiago, 2 slices of summer squash, a small handful of almonds and two more slices of asiago (what can I say, I heart my cheese!). Add second pita piece. Flip or press when browned (about 3-4 mins) and cook other side – about 3-4 mins too. Repeat for other pitas. Cheers!
