Tomato & Cottage Cheese Tops

Several of my blog recipes capitalize on pairings that complement each other with every bite.  This post is a matchmaker as well. I can’t remember how I came across this combo – maybe it had something to do with a homemade caprese salad with cottage cheese instead of mozzarella – but the juice of the tomato is a delectable mix with cheese (trust me!). I find myself opening a container of cottage cheese and adding the tomatoes and basil for a quick, healthy snack all the time.

The Jolly Hostess twist this week takes sweet, Italian ingredients including cherry tomatoes and basil and presents them in a way that is perfect for small plates at your next cocktail party. 

Ingredients

A dozen cherry tomatoes, sliced in half and hallowed out

1/4 cup cottage cheese

5 leaves of basil, torn in pieces

Garlic powder (optional)

Take your just-like-candy tomatoes and slice in half.  Using a butter knife, place in the center of the tomato and turn to take out the guts – swear, that’s the easiest way to describe it!

I like to tear the basil to give a homemade look: like a leaf on top. Tear basil into 1/2″ pieces to fit on top of the tomatoes.

Using a teaspoon, place a spoonful of cottage cheese into the hallowed out tomatoes.  Sprinkle with garlic powder if desired; place piece of basil on top. Repeat for other tomatoes.

Serve.
