3mint leaves2 muddled at the bottom of shaker, 1 for garnish
Put 1 cup sugar, 1 cup water and sliced ginger in small saucepan. Bring to a boil and let simmer. Stir occasionally until sugar has dissolved. Sit on medium heat for 20 minutes. Remove ginger and set simple syrup aside.
Add butter to skillet on medium heat. Add ginger pieces. Top with 1/2 tbsp sugar. Cook for 3 minutes, flip. Add 1/2 tbsp sugar and cook for 5 more minutes. Place on plate or cookie grate. Set aside and let cool.
Once ready to serve, put mint in martini shaker, muddle and add ice. Add cranberry juice, vod, and ginger simple syrup. Shake.
Make garnish on a toothpick- one small mint leaf, candied ginger and another small mint leaf.
