Before I get to our amazing app this week, we have to get serious for a sec.

I’ve been reflecting a bit on my  life and the important things in it, and I just have to tell you that that I am SO obsessed with you and am so grateful to you for reading and being my biggest fans. The best part is: I feel as though we have just started.  Thank you to those of you that have stuck with me from the start – when my photos were crap and I was just developing my writing style – to my blogger babes that I met along the way – who supported  my ideas and taught me about how to excel with SEO, Pinterest and food styling – and to those of you who have found genuine interest and  are commenting and sharing along the way.

The reason I am obsessed with you  is because I love my full time job, but like any job, it can be a stressful grind.  I work as a Marketing Consultant and help companies to purchase their branded materials better.  And it’s a lot of numbers, analyzing and processes.  I started TJH because I live for creating in the kitchen, have a thing for appetizers and their way in the world, and wanted to share my love of celebrating life with food and some bubbly.  And, ultimately, to make it my full time job one day.

In the meantime…

You allow me to have a creative outlet outside of work.  You have given me something to look forward to and get excited about; to exercise my creativity on all things small bites and to share my experiences.  It has made my life richer – or, fittingly, more bubbly! – and, after many ups and downs with the blog and some insecurities on the way, you are still here.  So, thank you to the moon and back.

My love for Jalapeno Poppers is real.

In honor of the 4th, backyard BBQ’s with sticky fingers, punch jars filled with boozy cocktails and seemingly endless summer nights with friends, I am sharing a recipe from Cooking Light with only one small change.  The recipe is so perfect as is (which my pride can sometimes get in the way of!) and super ideal for a grilling out appetizer.  Pride to the wind, I am so excited to share this just in time for July 4.

Jalapeno Poppers are so simple and involve only six ingredients.

  1. Jalapenos
  2. Cream Cheese
  3. Cheddar Cheese
  4. Shallots
  5. Bacon
  6. Garlic

I mean, seriously, how good does that sound?!

In summary.

The Jolly Hostess twist this week adds shallots (a little more garlicky oniony) to a killer Cooking Light recipe that you’ll want to make over and over.  This recipe was shared over a friends get together (shout out to Meg, Aunt Rachel and Uncle Tim!), which makes the recipe even more delish.  Last step? Be sure to share with friends (and some bubbly, of course).  

PS Rachel has the best tip for Jalapeno Poppers: pipe the filling, then place jalapenos in the fridge.  It’ll keep the cheese from slipping when on the grill.

Instructions
  1. Preheat grill to medium high heat.
  2. Cook bacon in skillet until crisp. Remove bacon, set on paper towels.
  3. Prep the jalapeno peppers. I have SUPER sensitive skin and would 100% recommend gloves for this step.
  4. Crumble bacon and combine with next 4 ingredients (through garlic) in a medium-sized bowl, stirring to combine. I like to use a hand mixer for extra fluffiness.
  5. Divide cheese mixture using a spoon or piping bag. If you don't have one, load the mixture into a zip lock, cut off the bottom corner and pipe that way.
  6. Place peppers, cheese side up on cooking spray-coated grill grate.
  7. Cover and grill peppers for 8-10 minutes, or until bottoms of peppers are charred and cheese is light brown. NOTE: make sure the jalapenos are charred or they will be realllly spicy (Brett found this out the hard way)!
  8. Place on serving platter.
