Lemon Feta Hummus Dip

Lemon Feta Hummus Dip is a no-chip appetizer that takes two adored Mediterranean ingredients and combines them for the ultimate hummus.  Feta cheese blended with garlicky chickpeas, lemon and topped with pickled onions for an appetizing flavor bomb (very similar to my Turmeric Cauliflower Crostini!).

I have loved Mediterranean food ever since I tried the salad at Roti Mediterranean Grill (please tell me you’ve had it!).  And ever since I created Roti Fridays as a congrats to myself for making it to the weekend – I’m telling you, Roti Fridays should be a thing for you too.  This recent food crush has allowed me to try a new cuisine in the kitchen, specifically for appetizers.  And it all starts with hummus.

The Roti ingredients that inspired Lemon Feta Hummus Dip.

  1. Dilly cucumber sauce
  2. Pickled onions
  3. Cilantro
  4. Roasted vegetables
  5. Lemon oregano pickles

Hummus is the perfect staple to spice up and in honor of my new loves (that would be lemon and feta!), I created this easy dip.  Plus, what would life be without hummus?

For busy hostesses, the food processor is key to this quick dip.  Here is how Lemon Feta Hummus is done:

  1. Make ahead the pickled onions, cauliflower and yellow peppers.
  2. Chop feta, juice lemon and cut cucumber into slices.
  3. Pile all ingredients in the food processor (outside of cukes and pickled onions), pulse and place in bowl.  For the perfect bite, add a swirl of olive oil and feta as toppings.

Lemon Feta Hummus Dip is a no-chip appetizer that takes two adored Mediterranean ingredients and combines them for the ultimate hummus.  Feta cheese blended with garlicky chickpeas, lemon and topped with pickled onions for an appetizing flavor bomb.

Instructions
  1. Make ahead pickled red onions, cauliflowers and yellow peppers (cauliflowers and yellow peppers are optional). Put all ingredients in a tightly sealed jar or Tupperware container and place in fridge for at least two hours.
  2. Drain the chickpeas in a strainer over a bowl, keeping the chickpea water (swear it's the KEY!).
  3. Chop feta cheese, mince garlic clove and juice lemon.
  4. Place chickpeas, feta cheese, tahini, chickpea water, olive oil, dill, garlic and juiced lemon in food processor. Pulse/grind for 2 minutes. Scrape the edges and repeat.
  5. Slice cucumbers in 1/8" pieces.
  6. Place hummus in bowl, swirl olive oil on top and feta. Surround with cucumbers on a plate or place in bowl next to dip. Place the pickled onions with a fork for guests to top as they wish.
