Okay loves, it’s time to indulge! How can you go wrong with loaded French fries? It can be made with sour cream and bacon, meaty chili or pot roast & Gruyère cheese (I was blown away at this one and am still trying to make it at home), and I am hands up. My type of loaded cheese fries requires a fork, is very sloppy and highlights the flavors working together. How do you like them?

The inspiration for this appetizer came from Mexican Street Corn – any cuisine that allows for walking and eating is a match for me. Mexican street corn is a gorgeous dish that utilizes fire roasted corn, mayo, cilantro, lime juice, garlic and queso fresco. When thinking about what I wanted to accomplish, the beauty of the slightly burnt corn and green of the cilantro were number ones in terms of presentation. The other ingredients came together by combining sweet potato fries and nachos.
We have cause for celebration with the launch of my new website, which means margs for everyone! And since appetizers go very well with happy hour, I now can’t imagine this dish without my Mangorita Champagne Cocktail. Seriously, we should start a thing: cocktail parties centered around appetizers and a cocktail pairing. I’ve got your first one here.
