Loaded Sweet Potato Fries w/ Cocktail Pairing

Loaded sweet potato fries is a drool-worthy combo of loaded french fries, Mexican street corn and nachos. The bonus?! This appetizer is paired with Mangorita Champagne Cocktail.

Loaded Sweet Potato Fries are all about indulging in a combination of cheesy, roasted and herbaceous flavors.

Okay loves, it’s time to indulge! How can you go wrong with loaded French fries?  It can be made with sour cream and bacon, meaty chili or pot roast & Gruyère cheese (I was blown away at this one and am still trying to make it at home), and I am hands up.  My type of loaded cheese fries requires a fork, is very sloppy and highlights the flavors working together.  How do you like them?

Loaded Sweet Potato Fries take aspects from Mexican Street Corn and Nachos for piled high mound of carb-filled goodness.

The inspiration for this appetizer came from Mexican Street Corn – any cuisine that allows for walking and eating is a match for me.  Mexican street corn is a gorgeous dish that utilizes fire roasted corn, mayo, cilantro, lime juice, garlic and queso fresco. When thinking about what I wanted to accomplish, the beauty of the slightly burnt corn and green of the cilantro were number ones in terms of presentation. The other ingredients came together by combining sweet potato fries and nachos.

We have cause for celebration with the launch of my new website, which means margs for everyone! And since appetizers go very well with happy hour, I now can’t imagine this dish without my Mangorita Champagne Cocktail.  Seriously, we should start a thing: cocktail parties centered around appetizers and a cocktail pairing.  I’ve got your first one here.

Loaded Sweet Potato Fries is paired with Mangorita Champage Cocktail because it’s time to celebrate (regardless of the occasion of lack of occasion)!

The Jolly Hostess twist this week presents an easy-to-put together option for the next movie night or happy hour – or for walking with food in hand (ha!). Be sure to provide forks and napkins because you will need them.  Wash it down with a sparkling margarita cocktail.

Instructions
  1. Cut sweet potatoes and add olive oil to medium-sized skillet.  Set heat to low.  Add sweet potatoes and cook for 6-8 mins, covered, tossing frequently.
  2. Chop red onion and red pepper. Once sweet potatoes are done, set aside and add frozen corn to skillet.  Cook for about 10 mins, stirring frequently. Done when the corn has slight burn marks.
  3. While corn is cooking, put queso in microwave-safe bowl, cover and cook for 30 secs. Stir and cook for 30 secs more, or until warm.
  4. Using a shallow bowl or plate, layer sweet potato fries, cheese sauce, corn, red pepper and red onion. 
  5. Top with cilantro leaves. Serve immediately.
Mangorita Champagne Cocktail
  1. Add tequila and mango juice to a martini shaker.
  2. Add ice and shake away! Pour evenly into 2 champagne glasses.
  3. Add pineapple juice and champagne. Serve.
