Loaded Sweet Potato Fries w/ Cocktail Pairing
Loaded sweet potato fries is a drool-worthy combo of loaded french fries, Mexican street corn and nachos. The bonus?! This appetizer is paired with Mangorita Champagne Cocktail.

Mangorita Champagne Cocktail
Instructions
  1. Cut sweet potatoes and add olive oil to medium-sized skillet.  Set heat to low.  Add sweet potatoes and cook for 6-8 mins, covered, tossing frequently.
  2. Chop red onion and red pepper. Once sweet potatoes are done, set aside and add frozen corn to skillet.  Cook for about 10 mins, stirring frequently. Done when the corn has slight burn marks.
  3. While corn is cooking, put queso in microwave-safe bowl, cover and cook for 30 secs. Stir and cook for 30 secs more, or until warm.
  4. Using a shallow bowl or plate, layer sweet potato fries, cheese sauce, corn, red pepper and red onion. 
  5. Top with cilantro leaves. Serve immediately.
Mangorita Champagne Cocktail
  1. Add tequila and mango juice to a martini shaker.
  2. Add ice and shake away! Pour evenly into 2 champagne glasses.
  3. Add pineapple juice and champagne. Serve.
