Pea Salad with Bacon with Champagne Vinaigrette

Pea Salad with Bacon takes my love for cold peas and champagne (vinaigrette) and combines it for a lovely, earthy and bacon-y spring salad.

How Pea Salad with Bacon came to be.

Leave it to me to make a salad that incorporates champagne, right? I know it is champagne vinegar, but you can’t blame a girl for trying! It is a main component of this cold pea salad and one of the reasons why it is so delish.  However, my showstopper is peas.  I remember when my sister and I were in third grade, we always ate our green veggies, especially peas.  However, Mary came home one day distraught and refused to eat her peas at dinner.  She said that her teacher described peas as little, green balls of evil and she was the only one in the classroom who loved them. Well, mom said that we could like and eat whatever we wanted to and we enjoyed peas for the rest of our childhood.

I will be honest, as we grew up, we didn’t eat that many peas, outside of pea & ham soup (actually LOVE it!). However, in my foodie travels, I had several cold pea salads and have come to realize that that cold peas have a completely different flavor that is a fresh alternative element for salads.  Earthy with a touch of sweet and, for this salad, they encompass the ability to take on the flavor of the champagne vinaigrette.

The Jolly Hostess twist this week offers a unique and different option for your starter: peas, turkey bacon, mozzarella, cherry tomatoes and delectable champagne vinaigrette.  The freshness and crispness of the peas will blow you away, as you can’t expect the same from cooked peas. Swear, you’ll be hooked like me! Lastly, for the busy hostesses, prep time consists of cooking bacon and chopping tomatoes, that’s all.  Easy to throw together, toss and serve.

Instructions
  1. Cook bacon until crisp, place on top of paper towel lined plate.
  2. Prep veggies: either strain canned peas or defrost frozen peas. Strain mozzarella pearls. Chop bacon in small pieces and mince basil.
  3. Add all ingredients to medium-sized bowl. Add a dash of salt and pepper. Toss in Champagne Vinaigrette.
  4. Serve immediately.
