Leave it to me to make a salad that incorporates champagne, right? I know it is champagne vinegar, but you can’t blame a girl for trying! It is a main component of this cold pea salad and one of the reasons why it is so delish. However, my showstopper is peas. I remember when my sister and I were in third grade, we always ate our green veggies, especially peas. However, Mary came home one day distraught and refused to eat her peas at dinner. She said that her teacher described peas as little, green balls of evil and she was the only one in the classroom who loved them. Well, mom said that we could like and eat whatever we wanted to and we enjoyed peas for the rest of our childhood.
Pea Salad with Bacon is served cold, which completely changes the taste of the pea.
I will be honest, as we grew up, we didn’t eat that many peas, outside of pea & ham soup (actually LOVE it!). However, in my foodie travels, I had several cold pea salads and have come to realize that that cold peas have a completely different flavor that is a fresh alternative element for salads. Earthy with a touch of sweet and, for this salad, they encompass the ability to take on the flavor of the champagne vinaigrette.
