You are going to be all about these Pimento Potato Bites! If you’ve seen my Spinach & Artichoke Mini Potato Skins, you know that I love a little potato (due to the Irish in me) and cheese. These little guys are perfect for a fresh after party snack (I’m sure they’d be amaze after a few drinkies), a side dish, or in true hostess form, an appetizer.
A quick tribute to St. Patrick’s Day (and all the potatoes).
Before we get to the recipe, I hope that you had a great St. Patrick’s Day (I celebrated St Paddy’s in Rome and it was not quite the same, however, I did have a little whiskey)! I missed all of the Shepard’s Pie, Corned Beef and Dubliner cheese (a must have in my charcuterie mix), but have been making up for it.
