I was a total root beer float kind of girl. # 1, Root Beer is the best sugar rush and brings me back to roast beef sandwiches and summer vacations. #2, whoever thought of adding ice cream is pure genius. The mix of carbonation and cream produces even more bubbles and what could be more fun than that?! Plus, I was totally blowing my own bubbles too (and still do).
It is for the same reasons that I’m crazy about Sorbet Champagne Cocktail and know that you will IRL (please share if you do!). The recipes replaces ice cream with sorbet for a lighter touch and champagne in place of root beer because bubbles, bubbles, bubbles – like this guy. It is a frothy, light concoction that also resembles a hot toddy, due to the addition of brandy, warming as it goes down.

This bubbly cocktail is super easy to make in batches and is served in a pitcher. Mom always uses Häagen-Dazs Raspberry sorbet, which is pretty in pink. We used to reserve it for Christmastime, but love it so much, have been making it at any reason to party (read: Valentine’s Day!). Plus, it’s so easy, you guys.
Sorbet Champagne Cocktail includes 3 ingredients and takes 2 minutes to make. It comes together like this.
- Add a pint of your favorite sorbet to a pitcher.
- Add brandy. Stir until blended.
- Slowly add a bottle of champagne.
I mean you could totally do it blinded-folded.
