Stuffed Pepper Bites

Stuffed Pepper Bites is all about the carbs (meat + cheese + pasta), topped and baked on bell pepper quarters for a low(er) carb, carb-filled dish.

The idea for Stuffed Pepper Bites came from my sis at a moment when only carbs were the answer.

About a month after my cutie pie goddaughter was born, we were filled with joy, and trying our best to create a Christmas celebration with a lot going on.  Mary was learning what it’s like to be a new mom, my brother-in-law had routine mouth surgery and I did everything I could to help.  Without our usual champagne-filled days, it was a little stressful (understatement!).  We coped with our favorite Christmas movies, taking turns holding and loving Michaela and naturally, food.

I found out something new about myself that week. At moments of high stress, I turn to what I know: cooking.  I spent the week making comfort food to freeze for later weeks, planning festive menus and – hopefully! – creating dinners to look forward to to, share in and relax with.

As a result, one dinner in particular is the inspiration behind Stuffed Pepper Bites.

The inspo-inducing dinner contained two Costco casseroles (read: lifesavers), stuffed peppers and macaroni & cheese, your pick.  Mar microwaved her dish as I held Michaela and, after it was done, she looked at me with an enthusiastic “TRY THIS”.  It was the stuffed peppers, topped with macaroni & cheese and ketchup.  Goals. This combo absolutely had to be added to my appetizer line up.

I created Stuffed Pepper Bites to cure moments like this one.

This week’s app is so good! Similar to the meal my sis and I shared that weekend, it is stress-reducing and indulging.  Combining two ahhh-mazing comfort food casseroles, this recipe can cure any long day, bad date or work disaster. And is seriously good.

Stuffed Pepper Bites is a quick solution with a veggie-based foundation.  It comes together like this:

  1. Make ground beef just like you would for stuffed peppers.
  2. Make Velvetta macaroni and cheese, because…cheese.
  3. Cut bell peppers in quartered boats and load up.
  4. Top with (more!) cheese and bake.

The Jolly Hostess twist this week is a carb dream and it is trying to be a little healthy. A for effort.  Have it be the super bowl, girls night in or you just need some carbs in your life, Stuffed Pepper Bites will be the appetizer that’ll make you say OHH YESS – and pass the ketchup.

Instructions
  1. Preheat oven to 350 degrees. Add water to a medium-sized pan and bring to a boil.
  2. Add 1 lb ground beef to medium sized skillet and cook until cooked through. Drain and set aside.
  3. In the same skillet, add 1/3 cup yellow onion. Cook for 1-2 minutes. Add garlic and cook until onions and garlic are tender. Add meat.
  4. Add 1 cup chicken stock, 3 tbsp tomato paste and 1 tbsp worcetershire sauce to skillet. Mix thoroughly, bring to a simmer and cook for 5 minutes.
  5. Once water is boiling, add macaroni and cook per box instructions.
  6. While both pans are cooking, cut peppers. First, slice with the pepper upright, as close to the stem as possible, into 4 pieces. Find the white part of each piece and cut, making sure to form a wall (see above photo). Use only the pieces that have a "boat" created. Scrap off any excess seeds. If you have questions, simply ask me!
  7. Line baking sheets with aluminum foil. Place pepper boats onto baking sheet, directly next to each other. You should have two lines formed of boats.
  8. Add half of the macaroni & cheese to the meat mixture (more for you!). Mix.
  9. Add a generous amount of combined mixture to boats, overlapping if needed.
  10. Bake for 25-30 minutes. Top with cheese and broil until cheese is golden.
  11. Top with chives and serve immediately.
