Stuffed Pepper Bites
Stuffed Pepper Bites is all about the carbs (meat + cheese + pasta), topped and baked on bell pepper quarters for a low(er) carb version.

  1. Preheat oven to 350 degrees. Add water to a medium-sized pan and bring to a boil.
  2. Add 1 lb ground beef to medium sized skillet and cook until cooked through. Drain and set aside.
  3. In the same skillet, add 1/3 cup yellow onion. Cook for 1-2 minutes. Add garlic and cook until onions and garlic are tender. Add meat.
  4. Add 1 cup chicken stock, 3 tbsp tomato paste and 1 tbsp worcetershire sauce to skillet. Mix thoroughly, bring to a simmer and cook for 5 minutes.
  5. Once water is boiling, add macaroni and cook per box instructions.
  6. While both pans are cooking, cut peppers. First, slice with the pepper upright, as close to the stem as possible, into 4 pieces. Find the white part of each piece and cut, making sure to form a wall (see above photo). Use only the pieces that have a “boat” created. Scrap off any excess seeds.   7. Line baking sheets with aluminum foil. Place pepper boats onto baking sheet, directly next to each other. You should have two lines formed of boats.
  8. Add half of the macaroni & cheese to the meat mixture (more for you!). Mix.
  9. Add a generous amount of combined mixture to boats, overlapping if needed.
  10. Bake for 25-30 minutes. Top with cheese and broil until cheese is golden.
  11. Top with chives and serve immediately.
