Sweet Potato Bites with Ricotta and Honey is a festive, skinny appetizer made with a mixture of fresh herbs, cranberries and pecans.

  1. Preheat oven to 400 degrees.
  2. Cut sweet potato, coat with olive oil and add salt and pepper.
  3. Place and oven and cook for 10 minutes; flip and cook for 8-10 more minutes. Set aside in the fridge while you prep other ingredients.
  4. Add rosemary and thyme to ricotta., mix.
  5. Once potato pieces are warm enough to touch, add a thin layer of ricotta mixture, 3-4 cranberries and 4-5 pecan pieces. Top with a swirl of honey.
  6. Serve immediately.
